Killer Burrito Casserole

Ingredients

  • 1 lb. ground beef
  • 1 Tbsp. cooking oil
  • 1 bell pepper, chopped
  • 1 small onion, chopped
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 can Ro-Tel tomatoes
  • 1/2 lb. Velveeta cheese
  • 1 pkg. flour tortillas
  • 1/2 c. cooking oil for tortillas
  • 1 1/2 c. Cheddar cheese
  • 1 c. Monterey Jack cheese

Directions

    Brown ground meat; drain fat.

    Add bell pepper, onion, salt, pepper, tomatoes and Velveeta cheese.

    Simmer on low heat for 15 minutes.

    Place flour tortillas, one at a time, in hot cooking oil for about 5 seconds.

    Drain on a paper towel.

    Put a small portion of the meat mixture on the bottom of a long casserole dish.

    Add about 2 tablespoons of meat to each tortilla; roll up tortilla and place in the casserole dish.

    Top with remaining meat mixture and Cheddar cheese; bake for 30 minutes.
