Ingredients

  • 2 fryers, boiled, boned and skinned (save stock)
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 1/2 lb. grated Cheddar cheese
  • 1 tsp. chili powder
  • dash of garlic salt
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can Ro-Tel tomatoes, run through blender
  • 1 pkg. corn tortillas

    Simmer in stock after chicken is removed the onion and green pepper for 10 minutes.

    Drain.

    Dip tortillas in stock.

    Line bottom of pan.

    Layer chicken, onion and green pepper and cheese. Pour cans of soup and tomatoes over it.

    Bake 30 minutes at 375°. Freezes well when uncooked.
