- 4 small yellow squash or zucchini, unpeeled
- 4 Tbsp. butter and olive oil mixed
- 1 large onion, thinly sliced
- 2 green peppers, cut in strips
- 4 tomatoes, peeled and wedged
- 1 1/2 tsp. salt
- 1/2 tsp. ground pepper
- 1/8 tsp. cayenne
- 1 (10 oz.) pkg. frozen corn
Directions

1Dice squash into 1/2-inch pieces.

2Melt butter and olive oil and saute squash in it until partly browned.

3Remove squash (and juice if too much) from pan.

4Add onion and green peppers.

5Saute until limp.

6Add tomatoes.

7Season well with salt, pepper and cayenne.

8Add corn.

9Cook, uncovered, for 30 minutes.

10Return squash to pan.

11Serves 8.
