Ingredients

  • 4 small yellow squash or zucchini, unpeeled
  • 4 Tbsp. butter and olive oil mixed
  • 1 large onion, thinly sliced
  • 2 green peppers, cut in strips
  • 4 tomatoes, peeled and wedged
  • 1 1/2 tsp. salt
  • 1/2 tsp. ground pepper
  • 1/8 tsp. cayenne
  • 1 (10 oz.) pkg. frozen corn

Directions

    Dice squash into 1/2-inch pieces.

    Melt butter and olive oil and saute squash in it until partly browned.

    Remove squash (and juice if too much) from pan.

    Add onion and green peppers.

    Saute until limp.

    Add tomatoes.

    Season well with salt, pepper and cayenne.

    Add corn.

    Cook, uncovered, for 30 minutes.

    Return squash to pan.
