- 1 1/2 pounds (about 3 bunches) spinach, stems removed
- 1 1/2 teaspoons sesame oil
- 1 1/2 teaspoons soy sauce
- 1 1/2 teaspoons minced garlic
- 1 1/2 teaspoons minced scallion
- 3/4 teaspoon toasted sesame seeds
Directions

1Bring a large kettle of salted water to a boil and have ready a large bowl of very cold water.

2Add the spinach to the boiling water and let cook for one minute.

3Immediately drain the spinach and immerse it in the cold water.

4When cool, drain again and gently dry it between several layers of paper towel.

5In a small bowl, mix together the remaining ingredients.

6Add the spinach and toss.

7Serve at room temperature along with barbecued meat.
