Ingredients

  • 30 to 40 medium cucumbers
  • 3/4 c. sugar
  • 1/2 c. salt
  • 3 Tbsp. pickling spice
  • 1 qt. vinegar
  • 1 qt. water
  • 1 head dill
  • 1 bay leaf
  • 1 clove garlic
  • 1 piece hot red pepper
  • 1/2 tsp. mustard seed

Directions

    Wash and cut cucumbers in half lengthwise; pack in hot jars with the last 5 ingredients put in each pint jar.

    Combine sugar, salt, vinegar and water.

    Tie pickling spices in a cheesecloth bag; add to vinegar mixture.

    Simmer 15 minutes.

    Heat to boiling and pour over cucumbers; leave 1/4-inch headspace.

    Adjust caps. Process pints and quarts 15 minutes in boiling water bath.

    Yield: about 7 pints.
