  • 1 15/16 cups quark cheese or 2 parts Ricotta cheese and 1 part sour cream
  • 3/4 cup sugar
  • 2 eggs
  • 2 tablespoons vanilla extract
  • 2 1/4 teaspoons baking powder
  • 2 cups flour
  • salt
  • vegetable oil
  • superfine sugar

Directions

    In a large bowl mix the cheese, sugar, eggs, vanilla sugar, yeast, flour, and a pinch of salt until just mixed (do not overmix).

    Heat two inches of oil in a large pot or Dutch oven. When the oil reaches 375 degrees Fahrenheit, lower the temperature to medium heat.

    Using 2 spoons, make balls out of the dough. Fry in the oil until they rise and are golden brown.

    Remove the balls from the oil and place on paper towels to remove excess oil.

    Sprinkle with superfine sugar and serve warm.
