Kraut Salad

Ingredients

  • 1 (15 oz.) can chopped kraut, drained
  • 1 c. diced onion
  • 1/2 c. grated carrots
  • 1 c. diced celery
  • 1 c. chopped sweet pepper (green, yellow, red or mixture)
  • 2 oz. jar chopped pimento
  • 1 1/4 c. sugar
  • 2/3 c. vinegar
  • 1/4 c. salad oil

Directions

    Mix the first 6 ingredients together.

    Mix the sugar, vinegar and salad oil together and pour over first mixture.

    Mix well and place in tightly covered bowl and chill in refrigerator at least 12 hours.

    Will keep for about 2 weeks in refrigerator.

    Great accompaniment with meat dishes or dried beans.
