Ingredients
- 5 cups flour
- butter or margarine, as needed
- mozzarella cheese or a mix of any hard cheese
- 1 teaspoon salt
- water, as needed
Directions

1In a large bowl mix the flour and the salt

2Add water and mix until smooth and non sticky dough is achieved

3Cover and let rest for half hour

4Make dough balls about the size of golf ball

5Using a dough roller, flatten the balls to get about 4 inches in size wafers
-
6Spread some butter on top of the wafer
-
7Put about 1 tsp of shredded cheese in the center of the wafer
-
8Fold one side of the wafer over to create half circle
-
9Using your fingers pinch the edges so the two layer stick well
-
10Lay the pockets on a tray
-
11Spread small pieces of butter on top and around the pockets
-
12Pre heat oven to 400 deg F
-
13Bake the tray in the oven until top goldens and then turn the pocket over and bake until golden.
