Ingredients

  • 3 tablespoons lemon juice
  • 1 lemon zest
  • 14 cup mint, shredded
  • 2 tablespoons olive oil
  • 400 g lamb backstraps
  • 14 cup pine nuts
  • 2 garlic cloves, minced
  • 400 g spinach, chopped
  • 12 red onion, finely sliced
  • 34 cup kalamata olive
  • 4 tablespoons olive oil
  • 120 g feta cheese

Directions

    Combine lemon juice, zest, and mint in small bowl.

    Heat 2 tablespoon olive oil over medium heat.

    Warm lamb, roughly 1 minute each side.

    Remove from heat.

    Saute garlic and pine nuts, roughly 2 minutes.

    Combine lamb, pine nuts & garlic, spinach, onion, and olives.

    Whisk 4 tbsp olive oil into dressing mixture, toss with salad.
