Ingredients
- 2 or 3 lb. lamb cubes with bone
- 1/2 gal. boiling water
- salt and pepper to taste
- 8 potatoes, peeled and diced
- 1 medium onion, peeled and diced
- 4 stalks celery, diced
- chopped parsley
- flour or cornstarch to thicken
Directions

1Place meat in brazier; season with salt and pepper.

2Cover with water.

3Place over high heat and bring to boil.

4Stir and boil 5 to 8 minutes.

5Remove scum.

6With a clean, damp towel, wipe residue from inside of pot.

7Simmer 1 hour.

8Wash and drain vegetables.

9Add boiling water to meat; add vegetables.

10Season with salt, pepper and parsley.

11Cover; bring to boil.

12Reduce to simmer about 1 1/2 hours.

13Thicken with flour or cornstarch. Serve.
