Lamb Stuffed Peppers

  • 1 tbsp olive oil
  • 1 None onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb ground lamb
  • 1 tbsp ground allspice
  • 2 tbsp slivered almonds
  • 2 tbsp tomato paste
  • 1/2 bunch fresh parsley, leaves roughly chopped, a little reserved for garnish
  • 4 None small peppers, tops removed, seeds and membranes scraped out
  • None None couscous, prepared, to serve

Directions

    Preheat oven to 350°F. Line a baking tray with parchment paper.

    Heat oil in a large frying pan over high heat. Saute onion and garlic for 1-2 mins, until tender. Add lamb and allspice. Cook for 5-6 mins, breaking up any lumps. Stir in almonds and tomato paste. Cook for 1 min. Season to taste then stir in parsley.

    Arrange peppers, cut-side up, on prepared tray. Fill with lamb mixture. Cover filling with pepper tops then cover pan loosely with foil. Bake for 30 mins. Remove foil and bake for another 5-10 mins.

    Sprinkle with reserved parsley. Serve with couscous.
