Lancanshire Hot Pot

Ingredients
- 1 lb. lean tender beef
- 5 medium potatoes
- 2 medium carrots
- 2 medium onions
- 2 stalks celery
- 1/2 level tsp. pepper
- 2 Tbsp. chopped parsley
- 1/2 level tsp. mixed herbs
- 1 tsp. salt
- 3/4 pt. stock or beef cubes
Directions

1Cut meat and vegetables into very thin slices.

2Place layer of potatoes on bottom of greased 3-pint dish.

3Add layer of meat, onions, carrots and celery.

4Sprinkle some of each seasoning on each layer.

5Repeat order of potatoes, meat and vegetables with top layer of potatoes.

6Pour stock into dish until 3/4 full. Cover dish and bake for 2 hours in moderate 350° oven.

7Remove cover for last 30 minutes to brown potatoes.

8Serves 6 people.
