Lancaster Corn Chowder

Ingredients

  • 3 to 4 Tbsp. butter or margarine
  • 2 c. chopped onions
  • 6 boneless chicken breasts, cooked and chopped in bite sized pieces
  • 1 large can corn, undrained
  • 3 qt. chicken stock or water
  • salt and pepper to taste
  • 1 recipe Granny's Rolled Dumplings

Directions

    In a large stockpot, saute onion in butter until tender, but not browned.

    Add remaining ingredients and simmer for 1/2 hour. Adjust seasonings.

    Bring to a rapid boil and add Granny's Rolled Dumplings.

    Reduce heat to medium-low.

    Cover and simmer for 25 to 30 minutes or until dumplings are done.
  6. 6
    Serve with cornbread.
