  • 3/4 c. onion
  • 2 cloves garlic
  • 2 Tbsp. olive oil
  • 52 oz. pasta sauce
  • 16 oz. Ricotta cheese
  • 10 oz. pkg. frozen spinach, thawed and drained
  • 1 lb. Mozzarella cheese
  • 1/2 c. Parmesan cheese
  • 2 eggs
  • 1 lb. cooked lasagna noodles
  • 1 1/2 lb. ground Italian sausage, browned

Directions

    In large pan, cook onion and garlic in oil.

    Add pasta sauce and sausage.

    Simmer 15 minutes.

    In a bowl, mix Ricotta, spinach, Mozzarella, Parmesan and eggs.

    In a 15 x 9-inch baking dish, layer 2 cups sauce, half the lasagna, half the cheeses, remaining lasagna and sauce.

    Cover.

    Bake at 350° for 45 minutes, or until hot.

    Uncover.

    Top with remaining cheeses.
