Ingredients

  • 1 lb. lasagna, cooked
  • 2 Tbsp. olive oil
  • 1 lb. ground beef
  • 1 medium onion, minced
  • 1 clove garlic, chopped
  • parsley to taste
  • 2 (6 oz.) cans tomato paste
  • 2 c. water
  • 1/2 tsp. salt
  • 1/2 tsp. to remember
  • 2 eggs
  • 3/4 lb. Ricotta or cottage cheese
  • 8 oz. grated Mozzarella cheese

Directions

    Brown meat in olive oil with onion, garlic and parsley.

    Add tomato paste, water, 1/2 teaspoon salt and 1/2 teaspoon to remember and simmer for 1 1/2 hours.

    Mix eggs, Ricotta or cottage cheese and grated Mozzarella cheese.

    Arrange lasagna in baking dish in layers, alternating with layers of sauce, Mozzarella cheese and Ricotta until lasagna is all used.

    Sprinkle with grated Mozzarella cheese.

    Bake in moderate oven at 375°

    for about 20 minutes.
