Ingredients
- 1 onion, minced
- 1/2 green pepper, minced
- Parsley flakes
- 1 tsp. Italian seasoning
- 1 can crushed tomatoes
- 1 can tomato sauce
- 1/2 c. of cottage cheese
- 1 egg
- 1 c. parmesan cheese
- 1 c. cheddar cheese, grated
- 8 oz. pkg. egg noodles, cooked and drained
Directions

1Saute onion and green pepper.

2Add beef, parsley, and Italian seasoning. Cook until brown.

3Add tomatoes and sauce.

4Simmer 15-20 minutes.

5Remove from heat.

6Mix egg and cottage cheese. Add to meat mixture.

7Stir in parmesan cheese. Place cooked noodles in a 2 quart baking dish.

8Add sauce.

9Add more Parmesan and cover with grated cheddar.

10Bake at 350° for approximately 20 minutes until cheese melts and casserole is bubbly.
