Lasagna Roll-Ups

  • 8 lasagna noodles
  • 1 Tbsp. olive oil
  • 2 large garlic cloves
  • 1 (10 oz.) frozen, chopped spinach, thawed and well drained
  • 1 c. fat-free Ricotta
  • 1 tsp. salt
  • 1 c. Parmesan cheese, grated
  • 1 c. shredded part-skim Mozzarella
  • 1 jar spaghetti sauce

Directions

    Cook noodles as directed.

    Lay flat and cool. Cook the olive oil and garlic cloves until golden brown. Mix the garlic and oil with the spinach, Ricotta, Parmesan, salt and Mozzarella.

    Mix together.

    Place the mixture on the noodles and roll each noodle up individually.

    Place in a baking pan.

    Cover with sauce and cook for 1 hour at 350°.
