- 6 lasagna noodles
- 8 oz fresh spinach
- 1 egg, lightly beaten
- 1 1/4 cup part-skim ricotta cheese
- 1 1/4 cup part-skim mozzarella cheese, shreded
- 1/4 cup parmesan cheese
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp ground nutmeg
- 1 1/2 cup marinara sauce
Directions

1Cook noodles according to instructions, drain Blanch spinach, drain preheat oven to 375

2Combine eggs, cheeses, spinach, salt, pepper, and nutmeg.

3Mix well.

4Spread 1/3 cup mixture on each noodle and roll.

5Pour 1/2 marinara sauce in the bottom of a 9x9 baking dish (size for 6 rolls).

6Place rolls in dish.

7Top with remaining sauce

8Bake for 20-25 minutes, until heated thoroughly.
