  • 12 noodles
  • 1 Tbsp. Bertolli olive oil
  • 1 (10 oz.) pkg. frozen spinach, thawed and squeezed dry
  • 2 Tbsp. minced onion
  • 1 small garlic clove, minced
  • 1 (16 oz.) container Ricotta cheese
  • 1/3 c. Parmesan cheese
  • 1/2 tsp. salt
  • 1 egg
  • 2 1/2 c. Jan's Italian tomato sauce
  • 1 c. shredded Mozzarella cheese

Directions

    Cook lasagne noodles according to package directions.

    In 2 quart saucepan, heat olive oil.

    Cook spinach, onions and garlic clove.

    Stir about 5 minutes until tender and clear.

    Remove pan from heat and stir in Ricotta cheese, Parmesan cheese, salt and egg.

    Drain lasagne noodles and put in single layer on wax paper to drain and dry.

    Evenly spread cheese mixture on lasagne noodles.

    Roll up each noodle jelly-roll fashion.

    In a 9 x 13 x 2-inch baking dish, spoon about 1 cup of tomato sauce.

    Arrange rolled noodles seam-side down in sauce.

    Top with remaining sauce and sprinkle shredded Mozzarella cheese.

    Cover with loose foil and bake for 30 minutes in a 375° oven.

    Be sure the dish is bubbly and the cheese is melted.
