  • 1 can condensed cream of mushroom soup
  • 1 can condensed cream of chicken soup
  • 1/4 c. dry minced onion
  • 1/4 c. sherry (can substitute water)
  • 1 c. raw white rice (not instant)
  • 6 to 8 pieces broiler-fryer pieces or boneless breasts
  • 1/2 c. grated Parmesan cheese

Directions

    Lightly grease a 2 1/2-quart casserole.

    Mix together the undiluted soups, minced onion and sherry.

    Spread 1/2 cup of raw rice in bottom of the casserole.

    Place 3 to 4 pieces of chicken on top of the rice.

    Add half of the soup mixture; sprinkle with half the Parmesan cheese.
