- 2 c. flour
- 8 oz. softened cream cheese
- 1 tsp. vanilla
- 1 c. boiling water
- 2 c. sugar
- 1 1/2 c. butter or margarine
- 8 oz. frozen whipped topping, thawed
- 2 Tbsp. unflavored gelatin
- 1 c. water
- 1/4 c. lemon juice
- 5 c. diced ripe mango
Directions

1Preheat oven to 350°.

2In a bowl, combine flour and 1/2 cup of sugar.

3Cut in butter.

4Press evenly into a 13 x 9 x 2-inch pan. Bake for 25 minutes or until crust is golden brown.

5Beat cream cheese with 1/2 cup of sugar.

6Fold in whipped topping and vanilla.

7Spread over cooled crust.

8Chill until firm.

9Soften gelatin in water.

10Add boiling water and the remaining 1 cup of sugar.

11Stir until gelatin dissolves.

12Stir in lemon juice and mangoes.

13Carefully spoon over cream cheese layer.

14Chill until firm.
