- 1 medium red potato, boiled, cooled and sliced
- 1 small avocado, peeled, pitted and sliced
- 1 small tomato, diced
- 2 Tbsp. or more fresh basil, chopped
- garlic flavored vinegar or white wine
- salt
- white pepper, freshly ground
Directions

1Arrange potato slices on large salad plate.

2Top with avocado slices, then tomato pieces.

3Sprinkle with basil.

4Whisk together oil, vinegar or wine, salt and pepper to taste and pour over vegetables.

5Set aside 10 minutes for dressing to soak in before serving.
