- 3 large eggs
- 1 cup sugar
- 23 cup butter melted
- 1 each lemon zest grated
- 313 cups flour, all-purpose
- 1 pinch salt
Directions

1In a large mixing bowl, beat eggs with sugar until pale and frothy.

2Add melted butter and zest.

3Fold in flour and salt and knead well.

4Wrap dough and chill 1 hour.

5Preheat oven to 425 degrees F.

6Lightly spray 2 cookie sheets with nonstick cooking spray.

7To make cookies: take a small ball of dough and roll into a sausage shape a little more than 1/2 inch thick by 5 inches long.

8Curve into an S shape and put on cookie sheet.

9Repeat until all dough is used.

10Bake 5 minutes.

11Reduce heat to 350F (180C).

12Bake another 15 minutes or until golden brown.

13Cool slightly on cookie sheets and then transfer to cooling rack.
