- 1 gallon homogenized milk
- 1 cheese rennet tablet
Directions

1In a heavy saucepan heat the milk to about 90° (dip baby finger in milk until you can withstand a count to 10). Dissolve 1 cheese tablet in 1 ounce warm water.

2Stir into milk and cover. Cover with a blanket and let rest 1 1/2 hours.

3Place cheese cloth into strainer and pour milk mixture in gently.

4Mold cheese into hand sized balls. Sprinkle with salt and place in container with 7 ice cubes.

5Allow to cool and then refrigerate.
