  • 1.5 pounds potatoes peeled and cut into chunks
  • 4 rashers of lean streaky bacon
  • 1 tsp vegetable oil
  • 1 medium leek finely sliced
  • 2/3 cup semi skimmed milk
  • Salt and freshly ground black pepper

Directions

    Add the potatoes to a pan of ligtly saled boiling water, cover and simmer for 20 mins or until tender.

    Drain and return to the pan. Meanwhile grill the bacon until crisp and chop roughley.

    Heat the oil in a frying pan, fry the leeks until golden brown. Boil the milk and pour over the potatoes.

    Mix the bacon and leek into the mask, season and serve piping hot
