  • 4 c. cooked, riced potatoes (no lumps)
  • 1/3 c. coffee cream (half and half)
  • 1/4 c. butter, melted
  • good pinch of salt
  • good pinch of sugar
  • 1 1/4 c. flour

    Combine all ingredients, mixing well.

    Knead well.

    Using 1/2 cup at a time, roll paper thin on floured board.

    Bake on lightly greased griddle, turning often to avoid scorching.

    Should be slightly golden, but never crisp.

    Wipe griddle clean each time.
