- 3 cups shredded raw sweet potatoes
- 1/3 cup butter, melted
- 3 eggs
- 1/2 cup milk
- salt and ground black pepper to taste
- 1 1/4 cups diced cooked turkey
- 1 cup shredded Cheddar cheese
- 1/4 cup diced onion
Directions

1Preheat the oven to 425 degrees F (220 degrees C).

2Press sweet potatoes into the bottom of a 9-inch pie dish. Pour melted butter over potatoes.

3Bake in the preheated oven until golden and firm, about 20 minutes.

4Whisk, eggs, milk, salt, and pepper together in a small bowl.

5Spread turkey, Cheddar cheese, and onion over the sweet potato crust. Cover with the whisked egg mixture.

6Place quiche in the oven and reduce temperature to 350 degrees F (175 degrees C). Bake until top is beginning to brown, 20 to 25 minutes.
