Leftovers Hash and Eggs

  • 1 cup Leftover veggies, potatoes, and/or meat
  • 1 tbsp butter or margarine
  • 2 eggs
  • 1 slice toast, buttered

Directions

    Chop leftovers.

    (I used leftover broccoli and steak fries with bacon and cheese)

    Melt butter in a pan.
  4. 4
    Add chopped leftovers to the pan and stir until they're heated through.
  5. 5
    Crack the eggs and add them to the pan.
  6. 6
    Stir to break up yolks and blend with the leftovers.
  7. 7
    Keep cooking until the eggs are fully cooked.

    Serve over toast, with your favorite sauce (salsa, bbq, hot sauce, Worcestershire, etc), if desired.
