- 1 cup Leftover veggies, potatoes, and/or meat
- 1 tbsp butter or margarine
- 2 eggs
- 1 slice toast, buttered
Directions

1Chop leftovers.

2(I used leftover broccoli and steak fries with bacon and cheese)

3Melt butter in a pan.

4Add chopped leftovers to the pan and stir until they're heated through.

5Crack the eggs and add them to the pan.

6Stir to break up yolks and blend with the leftovers.

7Keep cooking until the eggs are fully cooked.

8Serve over toast, with your favorite sauce (salsa, bbq, hot sauce, Worcestershire, etc), if desired.
