- 4 egg whites (save yolks for lemon filling)
- pinch of salt
- 1/4 tsp. cream of tartar
- 1 c. sugar
Directions

1Beat egg whites with the salt and cream of tartar until stiff. Add 1 cup sugar, a little at a time, continuing to beat until mixture is glossy and sugar is completely dissolved.

2Spread into a well buttered 9-inch pie plate, carrying it well out to the rim. Do not get over rim.

3Edge should be visible.

4Bake in a 275° oven for 25 minutes, then raise heat to 300° and bake 25 minutes more, until a faint brown tinge has appeared.

5Remove from oven and let cool completely.
