  • yellow cake mix
  • 4 eggs
  • 1/2 c. vegetable oil
  • 3/4 c. apricot nectar
  • 1 1/2 Tbsp. lemon extract

    Beat eggs; add cake mix, oil, nectar and extract.

    Pour in stem cake pan; bake 55 minutes at 325°.

    Cool 10 minutes; turn out and stick cake with ice pick a number of times to allow icing to penetrate cake.
