Lemon Baked Salmon

  • 1 12 lbs salmon
  • 2 tablespoons mayonnaise
  • 1 teaspoon fish rub seasoning (Pride of Szeged)
  • 12 lemon, juiced
  • 1 cup panko breadcrumbs
  • 14 cup parmesan cheese (optional)
  • 1 tablespoon lemon zest
  • 12 salt
  • 34 teaspoon pepper

Directions

    Place salmon skin side down in a glass baking dish.

    Brush mayonnaise on the salmon.

    Squeeze 1/2 lemon over top.

    Mix panko with zest of one lemon (about 1 T) and salt and pepper;and parmesan cheese if desired.

    Sprinkle panko mixture over top of the salmon.

    Bake in 350 degree oven for 35 minutes (using convection oven) or 45 minutes (conventional oven); or until fish flakes.

    Brown top under broiler for 2-3 minutes if desired; especially if cheese was added.
