  • 1 box lemon cake mix
  • 2 eggs
  • 1/3 c. oil
  • 8 oz. cream cheese
  • 2/3 c. sugar
  • juice of 3 lemons or 2 Tbsp. reconstituted lemon juice

Directions

    Mix cake mix, 1 egg, oil and 2 tablespoons of water by hand. Mixture will be stiff and slightly crumbly.
  2. 2
    Reserve 1 cup of mixture and pat remainder in the bottom of a 13 x 9-inch pan. Bake crust at 350° for 15 minutes.
