- 2 1/4 c. flour
- 1 c. butter, softened
- 1/2 c. confectioners sugar
- 2 c. sugar
- 1/4 c. flour
- 1/2 c. fresh lemon juice
- 4 large eggs
- peel of 1 lemon, grated
- confectioners sugar
Directions

1Preheat oven to 350°.

2Mix together 2 1/4 cups of flour, the butter and confectioners sugar in a large bowl until a soft dough forms.

3Remove and press dough into a 13 x 9 x 2-inch baking pan. Bake 20 to 25 minutes in preheated oven.

4Remove from oven.

5Beat the sugar, lemon juice, 1/4 cup flour, the eggs and lemon peel until well mixed.

6Pour over hot crust.

7Return to oven and bake an additional 20 minutes or until set.

8Cool on wire rack and cut into bars.

9Center will be soft.

10Dust with confectioners sugar. These freeze well.
