- 2 1/2 c. flour, divided
- 3/4 c. powdered sugar, divided
- 1 c. softened margarine
- 1/2 tsp. baking powder
- 4 eggs, beaten
- 1/3 c. lemon juice
- 2 c. sugar
Directions

1Combine 2 cups flour and 1/2 cup powdered sugar.

2Cut in margarine with a pastry blender until mixture resembles cornmeal. Spoon flour mixture into 13 x 9 x 2-inch baking dish; pressing mixture evenly and firmly into bottom of dish.

3Bake at 350° for 20 to 25 minutes or until crust is lightly browned.

4Combine 1/2 cup flour and baking powder; set aside.

5Combine eggs, 2 cups sugar, and lemon juice; beat well.

6Stir dry ingredients into egg mixture and pour over baked crust.

7Bake at 350° for additional 25 minutes or until lightly brown and set.

8Cool on wire rack.

9Sprinkle with 1/4 cup powdered sugar and cut into bars.

10Yields about 2 dozen bars.
