Ingredients

  • 1/2 c. butter
  • 1/4 c. powdered sugar
  • 1 c. flour
  • 1 c. granulated sugar
  • 2 eggs
  • 2 Tbsp. lemon juice
  • dash of salt
  • 1 tsp. lemon rind

Directions

    Mix together with a fork or pastry blender the butter, powdered sugar and flour.

    Pat into an ungreased 9-inch square pan. Bake in a 375° oven for 12 minutes or until golden brown. Mix together the sugar, eggs, lemon juice, salt and lemon rind. Pour over crust.

    Bake in a 350° oven for 25 minutes. Sprinkle top with powdered sugar.
