  • 1 Duncan Hines Deluxe lemon cake mix
  • 3 eggs
  • 1/3 c. Crisco shortening
  • 1/2 c. sugar
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 tsp. grated lemon peel
  • 1/4 c. lemon juice

Directions

    Combine 1 egg, shortening and dry cake mix until crumbly; reserve 1 cup.

    Pat remaining mixture lightly in ungreased 13 x 9 x 2-inch pan.

    Bake at 350° for 15 minutes or until light brown. Beat remaining 2 eggs, sugar, baking powder, salt, lemon peel and lemon juice with beater until light and foamy.

    Pour over hot crust.

    Sprinkle with reserved crumb mixture.

    Bake at 350° for 15 minutes or until brown.

    Sprinkle with confectioners sugar, if desired.
