- 1 cup all-purpose flour
- 1/2 cup butter or margarine, softened
- 1 cup powdered sugar
- 2 eggs
- 1 cup sugar
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 Tbsp. plus 2 tsp. lemon peel
- 2 Tbsp. fresh lemon juice
Directions

1Heat oven to 350 degrees.

2Mix flour, butter, and powdered sugar.

3Press evenly in bottom of ungreased square pan (8x8x2). Bake for 20 minutes.

4Beat remaining ingredients about 3 minutes on medium speed or until light and fluffy.

5Pour over hot crust. Bake about 25 minutes longer or just until no imprint remains when touched lightly in the center.

6Cool.

7Cut into 2 inch squares.
