- 1 1/4 c. all-purpose flour
- 1 c. sugar
- 1/3 c. margarine, softened
- 2/3 c. liquid egg substitute
- 1/4 c. lemon juice
- 2 tsp. grated lemon peel
- confectioners sugar (optional)
Directions

1Blend 1 cup flour and 1/4 cup sugar; cut in margarine until mixture resembles coarse crumbs.

2Press mixture on bottom of 9 x 9 x 2-inch baking pan.

3Bake at 350° for 15 minutes or until lightly browned.

4Blend egg product, lemon juice, lemon peel and remaining flour and sugar; pour over pastry crust.

5Bake 15 minutes more or until set.

6Cool slightly; sprinkle with confectioners sugar, if desired.

7Cool completely; cut into 2 x 1-inch bars.
