- 1 c. evaporated milk, thoroughly chilled
- 1 pkg. lemon gelatin
- 1 1/4 c. boiling water
- 1/3 c. honey
- 1/8 tsp. salt
- 3 Tbsp. lemon juice
- 1 lemon rind, grated
- 2 1/2 c. vanilla wafer crumbs
Directions

1Dissolve gelatin in boiling water.

2Add honey, salt, lemon juice and rind.

3When it has congealed slightly, beat evaporated milk until stiff, then whip gelatin into it.
