  • 1/2 c. shortening
  • 1 c. sugar
  • 2 eggs
  • 1 lemon rind, grated
  • 1 1/2 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. milk

Directions

    Cream shortening, sugar and eggs. Add lemon rind. Sift flour, baking powder and salt. Add to first mixture, alternating with milk. Bake at 325° for 1 hour. Allow to remain in pan 1/2 hour after removing from oven. Apply glaze (1/4 cup sugar and juice of lemon) to hot bread.
