  • 1/3 c. melted butter
  • 1 c. sugar
  • 2 eggs
  • 1 1/2 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. 7-Up
  • 1/4 tsp. almond extract
  • 1/2 tsp. vanilla extract
  • 1 Tbsp. grated lemon peel
  • 3/4 c. chopped pecans

    Blend well the butter and sugar. Beat in eggs, one at a time. Add extracts.

    Sift together dry ingredients.

    Add to egg mixture alternately with 7-Up.

    Blend just enough to mix. Fold in lemon peel and nuts. Turn into greased loaf pan. Bake in preheated 350° oven for 45 to 55 minutes.
