- 3/4 lb. butter
- 2 1/2 c. sugar
- 6 eggs
- 4 c. flour
- 1 tsp. baking powder
- 1/2 lb. candied cherries, chopped
- 1/2 lb. candied pineapple, chopped
- 4 c. pecans, chopped
- 2 oz. bottle pure lemon extract
Directions

1Cream the butter and sugar. Beat in eggs, one at a time.

2Sift dry ingredients together (save 1/2 cup for dusting).

3Add flour gradually. Add lemon extract, fruits and nuts by hand.

4Grease and flour 4 loaf pans. Bake at 300° for 45 minutes.

5Test after 40 minutes. Can be frozen and better if made 2 or 3 days in advance.
