  • 1/4 lb. butter or margarine
  • 1 1/2 c. flour
  • 1 c. sugar
  • 1/2 c. milk
  • 2 eggs
  • 1 tsp. baking powder
  • grated rind of 1 fresh lemon
  • juice from 1 lemon
  • 1/3 c. sugar

Directions

    Cream butter and sugar.

    Add eggs, one at a time. Beat well. Add milk alternately with flour that has been sifted with salt and baking powder.

    Add lemon rind.

    Bake in greased loaf pan for 60 minutes at 350°. Cool 5 minutes.
