- 1/2 c. shortening
- 1 c. sugar
- 2 eggs, beaten
- 1 1/4 c. sifted flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. milk
- 1/2 c. finely chopped nuts (optional)
- grated peel of 1 lemon (optional)
- 1/4 c. sugar
- juice of 1 lemon
Directions

1Cream shortening and sugar until fluffy with mixer, about 7 minutes.

2Add eggs, beating well.

3Add salt and baking powder alternately with milk.

4For more lemon flavor, replace some of the milk with lemon juice.

5Mix in nuts and peel.

6Bake in waxed paper-lined, greased loaf pan for 40 to 50 minutes at 350°.

7Watch carefully so it doesn't burn.

8Combine 1/4 cup sugar and lemon juice; pour over bread after it is removed from the pan.

9The texture of this is more like cake than bread.
