  • 1/2 c. shortening
  • 1 c. sugar
  • 2 eggs, beaten
  • 1 1/4 c. sifted flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. milk
  • 1/2 c. finely chopped nuts (optional)
  • grated peel of 1 lemon (optional)
  • 1/4 c. sugar
  • juice of 1 lemon

    Cream shortening and sugar until fluffy with mixer, about 7 minutes.

    Add eggs, beating well.

    Add salt and baking powder alternately with milk.

    For more lemon flavor, replace some of the milk with lemon juice.

    Mix in nuts and peel.

    Bake in waxed paper-lined, greased loaf pan for 40 to 50 minutes at 350°.

    Combine 1/4 cup sugar and lemon juice; pour over bread after it is removed from the pan.
