- 5 Tbsp. margarine
- 1/2 tsp. salt
- 1 c. sugar
- grated rind and juice of 1 lemon
- 2 eggs
- 1 1/2 c. flour
- 1 Tbsp. baking powder
- 1/2 c. milk
- 1/2 c. chopped nuts (optional)
Directions

1Cream margarine and sugar.

2Add eggs, 1 at a time, beating well after each.

3Add grated lemon rind.

4Combine flour, salt and baking powder; add to mixture, alternately with milk.

5Add nuts, if desired.

6Bake in a well-greased loaf pan for 55 minutes at 350°.
