Ingredients

  • 1/3 c. melted butter
  • 1 c. sugar
  • 2 eggs (unbeaten)
  • 3 Tbsp. lemon extract
  • 1 1/2 c. sifted all-purpose flour
  • grated rind of 1 large lemon
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1/2 c. chopped nuts
  • 1/2 c. whole milk

Directions

    Mix sugar, melted butter and lemon extract; beat in eggs. Sift dry ingredients together and add alternately with milk.

    Beat just enough to blend.

    Fold in rind and nuts.

    Bake 1 hour or more at 350° in greased 9 x 5-inch loaf pan with waxed paper on bottom. Let cool slightly.

    Remove from pan and place on foil.
