- 6 eggs, well beaten
- 2 c. sugar
- 1/2 c. lemon juice
- 1/4 c. butter or margarine
- 1/8 tsp. salt
Directions

1Beat eggs well; add sugar and continue beating.

2Add lemon juice and salt.

3Mix well on low speed.

4Melt butter in double boiler and add to mixture.

5Stir well and cook, stirring frequently until thick.

6Serve in tart shells, between cake layers or spread on toast, biscuits, muffins or bread.

7Good on ice cream, Boston cream pie or all alone.

8Also called lemon curd.
