- 3/4 c. self-rising flour
- 1/2 tsp. baking powder
- 2/3 c. butter
- 3/4 c. sugar
- 2 large eggs, beaten
- 4 Tbsp. milk
- rind of 1 lemon
- juice of 1 lemon
- 1/4 c. sugar
Directions

1Cream butter until texture of mayonnaise.

2Gradually add 3/4 cup sugar, then add the beaten eggs and finely grated rind of lemon.

3Alternately add flour, baking powder and milk, a little at a time.

4Butter pan (loaf pan, 8 1/2 x 4 1/2 x 2 1/2-inch) well and add filling and bake at 350° for 40 to 45 minutes.

5Cook lemon juice and 1/4 cup sugar until melted.

6Prick hot cake with a fork and pour the juice over the cake.

7Leave the cake in its tin until cool.
