  • 1/4 c. butter
  • 1 c. sugar
  • 2 eggs, separated
  • 2 Tbsp. flour
  • 1 c. milk
  • 1 large lemon

Directions

    Cream butter and sugar. Add lemon juice and beaten egg yolks; mix.

    Stir in flour and milk.

    Fold in egg whites that have been beaten stiff.

    Pour in unbaked pie shell and bake at 450° for first 10 minutes.

    Reduce heat to 325° and bake until set as custard, about 45 minutes.
