  • 1 c. sugar
  • 2 Tbsp. butter or margarine
  • juice and grated rind of 1 lemon
  • 2 egg yolks
  • 3 Tbsp. flour
  • 1 c. milk
  • 2 egg whites, stiffly beaten
  • 1 unbaked pie shell

Directions

    Cream sugar and butter; add lemon juice and rind.

    Beat in egg yolks and flour; mix well.

    Add milk gradually; beat until well blended.

    Fold in beaten egg whites.

    Pour into pie shell and bake at 350° until center of pie is firm, about 30 minutes or until knife inserted comes out clean.
