- 1 c. sugar
- 2 Tbsp. butter or margarine
- juice and grated rind of 1 lemon
- 2 egg yolks
- 3 Tbsp. flour
- 1 c. milk
- 2 egg whites, stiffly beaten
- 1 unbaked pie shell
Directions

1Cream sugar and butter; add lemon juice and rind.

2Beat in egg yolks and flour; mix well.

3Add milk gradually; beat until well blended.

4Fold in beaten egg whites.

5Pour into pie shell and bake at 350° until center of pie is firm, about 30 minutes or until knife inserted comes out clean.
